AmyG Hello Heather here I hope you are well. When you are looking at the data from the chrome extension it is a snapshot of the core web vital scores from your device at that moment in time. The Lab data is a statistical approximation using pre defined devices and settings of what is happening on your site. Both are useful in terms of understanding more about your site and what areas you need to work on to improve your sites core web vitals.
Looking at your core web vitals there is not enough data within Google from visitors to your site to use real world data and so by working on increasing your sites traffic this will help Google to have more data.
