Let's address point 2 first - because we need to clarify.
Ads will always slow down a site, but what makes Ezoic different is how we're able to optimize and serve those ads while mitigating that speed effect.

We also need to keep in mind that caching is the best way to speed up a site, and depending on traffic volumes and visitor frequency, as well as how often you are making changes to the site (and clearing the cache), it can take some time for Ezoic CDN caching to start really making an impact. If your cache hit rates are well above 60% and you're still seeing poor speeds, then that would suggest that the setup with Ezoic needs to be adjusted.
It's also important to keep in mind that the 'PSI Score' isn't really what Google is using to rank sites - they are working off the CoreWeb Vitals metrics, which is what Ezoic is working to optimize for on your site.
When I access your Dashboard > Speed tab and look at the LEAP setup, I can see three big suggestions being made that would help speed up the site, and further I'm seeing that since activating LEAP, your CWV scores have drastically improved and look to be following a path to continue doing so (LEAP > Core Vitals).
Regarding your first point, about a page not reflecting the changes you are making on the back end, can you explain the process you're following in a bit more detail?
For instance, what exactly are you changing on the site?
Once you make the change, what are you then doing with the Caches?
Once you clear the caches, are you then also clearing your browsers cache/cookies/history and waiting about 15 minutes to see if the changes go live?
