I'm wondering if it is an issue of my account or a general problem: I'm not able to see anymore the data about visitors but I can see the generated ads revenue. Is it a general Ezoic issue or something related to my account?

It's not clear what you are referring to. Are you looking at the earnings report in your publisher dashboard?
The stats get updated by 12pm Pacific Time.
