Hi John - although page speed insights isn't able to detect an LCP element, it looks like your actual user scores are tracking just fine (these are the scores that effect SEO). We're also able to get scores back when we run live tests on your site here https://pubdash.ezoic.com/leap/measure/lab (this is exactly the same test that pagespeed insights runs)
It could just be that Google have a bad cache of your content that's occurred around the time you've made the changes, and it'll eventually flush out of their system. As long as you're not seeing any issues on the site itself I wouldn't be concerned about any of this.
